Citrus Chia Fresca
I get kind of moody with my drinks.
I will drink the same thing for a few months, until I drastically change what I want, typically with the season. Very rarely do I drink just plain water, so it always has to be jazzed up, like my favorite Honey & Ginger Warm Lemon Water.
As summer starts to creep up on us, I was excited to see that this months The Recipe Redux was all about fresh & tasty beverages.

Unfortunately, since I’ve been sick I’ve had to cut alcohol out of my diet (for now) so a mocktail recipe it is! Although I’m 150% sure this would taste amazing with a shot of Captain Morgan White Rum 😉
But I kind of worked out perfect because I’ve recently reconnected with an old high school friend on a topic that is really important to the both of us, and that is raising awareness for diabetes education and research.
As you may know, my little sister is a Type 1 Diabetic and inspired me to become a registered dietitian, so diabetes has always been near and dear to my heart. I am now lucky enough to work with the American Diabetes Association every week for my Health in a Hand Basket news segment on Good Day Rochester every Monday morning at 7:50am.
So when Erika came to me and wanted to work together on developing a recipe to help promote her participation in this years 2017 Tour de Cure ride right here in Rochester, NY, I was more than happy to help!
Together we came up with this delicious Citrus Chia Fresca recipe, a fantastic beverage that anyone can enjoy, but specially designed to be a recovery drink for those participating in the race this year.

Guest Post from Erika, Tour de Cure rider 2017
My name is Erika Kalgren and I’m so excited to be partnering with Emily KyleNutrition as part of my Tour de Cure ride. Tour de Cure is a series of cycling fundraising events hosted nationally to help benefit the American Diabetes Association. The mission is to prevent and cure diabetes and to improve the lives of those with diabetes.
An important personal goal of mine for this ride is to help educate my community and promote healthy lifestyle choices! A couple years ago, I started to explore food as medicine. Seeing some of the health problems in my family, including type 2 diabetes, I decided I wanted to do everything I could now to mitigate my risks of developing the same health problems. I’ve learned so much on my journey about the power of eating wholesome and natural foods. I’m grateful to help educate others now with Emily Kyle Nutrition.
Being able to manage blood sugar levels is critical for those with diabetes. If blood sugar levels are too high or too low for too long, serious health problems can occur. This drink was created with controlling blood sugar levels in mind as an alternative to the commonly found sugar packed sports drinks. Designed to help replenish electrolytes and help maintain energy levels, this drink is refreshing without the blood sugar spike! It’s perfect for workouts or days spent working under the hot sun. Whether you are trying to manage your diabetes, or simply watch your sugar in take, like me, this drink is a delicious option.

Citrus Chia Fresca
Now that you know a little bit more about Erika and her amazing passion for riding for a cure, lets get to this delicious recipe!
Together we wanted to create a fabulous drink that would provide many health benefits to anyone, including those who may be participating in the race 🙂
Of course, the most important ingredient in this recipe is water. We all know we need water to replenish what is lost during exercise, and that it is important to stay hydrated because dehydration could lead to very serious medical problems.
Then we added citrus juice in the form of lemon, lime and orange juice, which will help to provide vitamins and important electrolytes, including potassium.
And speaking of electrolytes, when you sweat a lot, you not only lose a lot of water but you lose the important mineral sodium as well, so we have added a hearty dash to this drink so you can replenish what was lost during your race.
Of course, if you were thinking of putting the white rum right in your drink, may I suggest you salt your rim with a lime and this salt first? 😉
We also added chia seeds, because they are a nutritional powerhouse that add a unique texture to this drink – in a good way!

- 1 tablespoon of chia seeds
- 2 cups of water
- 1/4 cup orange juice
- 1/4 cup lemon juice
- 1/4 teaspoon salt
- 1/4 stevia optional to taste
- juice from 1 lime
Simple as pie!
Mix all of your ingredients together and enjoy!
