Featured as the 5th recipe in my christmas cookie series, this is one of my favorite recipes to share with you and the members of my Edibles with Emily Community.

I am excited to share this tasty recipe with you! My dad shared this recipe with me and a few other tips for making these cookies perfect.

They must be neither too thick nor too thin, so they’re soft but not fluffy. Don’t overcook; you want them to be chewy and a little crispy around the edges.

I will also discuss how you can infuse this recipe, from my Bliss cannabutter to infused sugar, concentrates, and more.

Of course, if you don’t like butterscotch, you can easily swap in raisins for a more traditional oatmeal raisin cookie!

What You’ll Need

  • 1ยฝ cups old-fashioned rolled oats
  • 1ยผ cups all-purpose flour
  • ยฝ teaspoon ground cinnamon
  • ยฝ teaspoon baking powder

  • 1 cup white, granulated sugar packed

Step-by-Step Instructions

The step by step process for making cannabis butterscotch oatmeal cookies.
  • Step 1 – Preheat the oven to 350ยฐ F. Line two baking sheets with parchment paper and set aside. 
  • Step 2 – Combine the oats, flour, cinnamon, baking powder, baking soda, salt, and nutmeg in a large bowl. Mix until all ingredients are combined. Set aside.
  • Step 3 – In a separate medium-sized bowl, cream the butter and sugar with a hand mixer until light and fluffy, approximately 2-3 minutes.
  • Step 4 – Add the egg and vanilla to the creamed butter bowl and beat well with the mixer.

  • Step 5 – Gradually add the dry ingredients to the wet ingredients while continuing to mix. Mix until all ingredients are well incorporated, and a dough is formed. Gently fold the butterscotch chips into the dough.
  • Step 6 – Place rounded teaspoons of dough on parchment paper about 2โ€ apart. 
  • Step 7 – Bake for 7-9 minutes or until the cookies are light golden brown.
  • Step 8 – Remove from the oven and let cool for at least 5 minutes before enjoying.

Storage Instructions

These cannabis chocolate chip cookies have the same shelf life as other cookies.

Store them at room temperature for up to seven days. Freeze after seven days to prevent spoilage.

Additionally, storing these cookies in an air-tight container with a slice of bread will keep them soft and moist.

Tips for The Best Cookies Possible

  • The butter must be soft (room temperature) but not melted
  • The best results come from baking these on parchment paper vs. aluminum foil
  • Baking time is critical; you must watch them closely for the best results. For my oven, 350ยฐF for about 9 minutes works best. They should start to crisp around the edges but remain soft in the center.
  • When these come out of the oven, I prefer to let them cool on a rack to prevent further cooking on the hot pan.

As with all things cannabis, there is more than one way to infuse something.

Here, you will find multiple ways to infuse these cookies based on your personal preferences and what you have available already.

Infuse Oil or Cannabutter

To make these delicious butterscotch oatmeal cookies, you will need one of these staple recipes:ย infused coconut oilย orย cannabutter.ย 

Used interchangeably, using either will work in this recipe.

Oil infusions are an easy way to infuse a full spectrum of compounds like CBD or THC from the cannabis plant into the food you are eating.
