Why You Will Love This Recipe

Featured as the third recipe in my cannabis christmas cookie series, this is one of my favorite recipes to share with you and the members of my Well With Cannabis Community.

Besides being a recipe passed down by my Dad, a few things make these the perfect butterscotch oatmeal cookies.

They’re soft but not fluffy. They’re chewy and a little crispy around the edges. And they have to be neither too thick nor too thin.

I am excited to share the tasty recipe with you, and I will also review the many different ways you can infuse these cookies, from my Bliss cannabis butter to cannabis sugar, concentrates, and more.

You can choose one option or the other based on what you have available, or you can choose to infuse with more than one option for a more potent edible.

And, of course, if butterscotch is not for you, you can easily swap in raisins for a more traditional oatmeal raisin cookie.

What You’ll Need

  • 1½ cups old-fashioned rolled oats
  • 1¼ cups all-purpose flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅛ teaspoon ground nutmeg optional
  • ½ cup Bliss cannabutter, room temperature
  • ¼ cup regular butter, room temperature
  • 1 cup white, granulated sugar packed
  • 1 large fresh egg
  • 1 Tablespoon vanilla extract
  • 1¼ cups butterscotch chips

Step-by-Step Instructions

The step by step process for making cannabis butterscotch oatmeal cookies.
  • Step 1 – Preheat the oven to 350° F. Line two baking sheets with parchment paper and set aside. 
  • Step 2 – In a large bowl, combine the oats, flour, cinnamon, baking powder, baking soda, salt, and nutmeg. Mix until all ingredients are combined. Set aside.
  • Step 3 – In a separate medium-sized bowl, cream the butter and sugar together with a hand mixer until light and fluffy, approximately 2-3 minutes.
  • Step 4 – Add the egg and vanilla to the creamed butter bowl and beat well with the mixer.

  • Step 5 – Gradually add the dry ingredients to the wet ingredients while continuing to mix. Mix until all ingredients are well incorporated, and a dough is formed. Gently fold the butterscotch chips into the dough.
  • Step 6 – Place rounded teaspoons of dough on parchment paper about 2” apart. 
  • Step 7 – Bake for 7-9 minutes or until the cookies are light golden brown.
  • Step 8 – Remove from the oven and let cool for at least 5 minutes before enjoying.

Storage Instructions

These cannabis chocolate chip cookies have the same shelf life as other cookies.

Store them at room temperature for up to seven days. Freeze after seven days to prevent spoilage.

Additionally, storing these cookies in an air-tight container with a slice of bread will keep them soft and moist.

Tips for The Best Cookies Possible

  • The butter must be soft (room temperature) but not melted
  • The best results come from baking these on parchment paper vs. aluminum foil
  • Baking time is critical; you must watch them closely to get the best results. For my oven, 350°F for about 9 minutes works best. They should be just starting to crisp around the edges but remain soft in the center.
  • When these come out of the oven, I prefer to cool on a rack to help prevent further cooking on the hot pan.

Infusion Options

As with all things cannabis, there is more than one way to infuse something.

Here, you will find multiple ways to infuse these cookies based on your personal preferences and what you have available already.

Infuse Oil or Cannabutter

To make these delicious butterscotch oatmeal cookies, you will need one of these staple cannabis recipescannabis-infused coconut oil or cannabutter

Used interchangeably, using either will work in this recipe.

Oil infusions are an easy way to infuse a full spectrum of compounds like CBD or THC from the cannabis plant into the food you are eating.

You will want to make sure you have your coconut oil or cannabutter prepared BEFORE diving into making your own cannabis oatmeal cookies.

Making butter or oil first involves decarboxylation and then a water bath that cooks for approximately 4-hours.

Once you have your cannabis oil or butter ready, you can go ahead and use it in any other of our delicious infused recipes, like these classic brownies.

Infuse with Cannabis Sugar

You can also make these cannabis oatmeal cookies with cannabis-infused sugar.

It is entirely up to you whether or not you want to use infused oil, cannabutter, or infused sugar in this recipe.

Alternatively, you could also use BOTH infused oil or butter AND infused sugar together for an extra potent batch of cookies.

Infuse With Concentrates and Extracts

You can also make cannabis edibles with cannabis concentrates like FECO.

First, check to see if your concentrate needs to be decarbed before consuming.

Once the concentrate is ready, you will simply mix it with the 1 cup of butter as called for in this recipe.

    This is my second cookie recipe. I omitted the butterscotch chips since I’m not a fan. Cookies turned out really good and not overly sweet. Definitely making this again.

    I made them a little too big as I only had enough for 22 cookies rather than the 24, which I’m fine with since my normal dose is 675 mg of THC per serving.

    They’re tasty. My nutritional info came out differently from yours but that’s okay; I appreciate you posting them as I’m trying to lose weight.
