What You’ll Need

- 2 cups granulated sugar: White sugar is ideal. However, if you don’t want to use cannabutter or want a double infusion, you can use cannabis sugar here.
- ยฝ cup milk: Any milk will do. Whether you want to use cannabis, traditional dairy, or plant-milk substitutes, they all should work here.
- ยผ cup unsweetened cocoa powder: Use unsweetened, or this recipe may be too sweet.
- 3 cups quick-cook oats: Make sure to use these and not old-fashioned oats or your cookies may turn out hard and chewy.
- ยฝ cup crunchy peanut butter: Crunchy or smooth, your choice, but the chunky texture helps to add to the Rocky Road experience. You can also use infused peanut butter or any nut or seed butter here. For a nut-free option, try hemp seed butter.
- 1 teaspoon vanilla extract: For flavor.
- 1 cup mini-marshmallows: Optional, but enhances the Rocky Road experience.

- Step 1: Gather your equipment and measure your ingredients. If you haven’t already, prepare your cannabutter. Line two baking sheets with parchment paper. Set aside.
- Step 2: In a large saucepan over medium heat, combine the cannabutter, sugar, milk, and cocoa powder.
- Step 3: Bring the mixture to a rolling boil. Cook for 60 seconds. Turn off the heat.
- Step 4: Add the oats, peanut butter, and vanilla extract to the pan. Stir well.
- Step 5: Fold in the marshmallows.

Cannabis sugar: You can easily use cannabis sugar in this recipe. Feel free to use it as a stand-alone ingredient with cannabutter or coconut oil for double infusion.
Cannabis peanut butter: If you already have some prepared, you can use peanut butter in this recipe.

Hello Emily! Doesnโt heating the canna oil up to boiling decrease the potency of the oil? I understood that after infusing, you should avoid high heat a second time. Is this true?

Hi Greg. This is a great question! I like to think of it like this:
Itโs kind of like when you roast a chicken. You put it in the oven at 350ยฐ for 1-2 hours, but the chicken itself only ever needs to get to the internal temp of 165ยฐ until itโs done. When baking, the item itself should not get to 350ยฐ because it would burn up. You donโt want or need to get up to 350ยฐ, you just want the item cooked through or to 165.
THC starts to degrade at 292ยฐF and with boiling, the temperature won’t get that high. Plus, you would need more time than what we are working with in this recipe to start degradation.
